Nearly all can be adapted to modern efficient techniques. And some, like boiling a 15-pound stuffed turkey for five hours before roasting it covered with a cup of clarified butter are just good for a giggle. But there are many wonderful memories tied up in these recipes, memories of my Sitti teaching me how to keep the traditions alive just as these authors have done.
